Really anything from Deadwing or In Absentia is pretty good to start with. I'm not too huge on Stupid Dream, but other PT fans really like it.

Last evening, I was listening to the Skies of Arcadia OST : marvelous :! Like the game

I always do the VG music thing, but yesterday I was checking out some Lithuanian sutartine music, because I was reading that they were a good example of polytonal music. It was pretty cool, definitely a neat effect, lots of use of canon and very polyphonic.
